Feb. 28—STEWARTVILLE, Minn. — After years of doing business in the area, Trisha and Pat Adamson are teeing up something new at Stewartville’s golf course.
The Adamsons purchased the Riverview Greens Golf Course, including its restaurant, on Jan. 2, 2025.
Despite taking over at the beginning of the year, the restaurant, now renamed to Adamson’s Tavern on the Greens, was only closed for a week for renovations and to revamp the menu.
Now, a month or so into the adventure, Trisha says they are listening to the community’s suggestions — like potentially adding breakfast in the future — and getting settled into their work.
“You want them to be honest and then make the changes that you need going forward,” Trisha said. “The community wants breakfast and they would love a place that has a great steak, so we’re working on that aspect. Also we’re bringing some healthy things to the menu, because I like to eat healthy.”
The restaurant is open Wednesday through Saturday (Wednesdays and Thursdays the kitchen is open from 4 p.m. to 8 p.m. and the bar is open until 10 p.m. on Fridays and Saturdays the kitchen is open from 4 p.m. to 9 p.m. and the bar’s hours are 2 p.m. to 11 p.m., according to the course’s website).
The peak days are weekend nights with a fish fry on Fridays and prime rib on Saturdays. They hope adding breakfast will bring in more business during the slower times. The Adamsons held a trial breakfast event for friends and family that was well received.
Breakfast is not the only thing coming. The Adamsons plan to create a system for golfers to order food on the course to pick up before heading to the back nine. Trisha said the system might include a QR code for golfers to order when they get to the eighth hole, and then they could grab the food when they come through on the ninth hole.
Pat is also working with the city to transform the golf course from a par 68 to a par 70.
The event space, which is upstairs from the restaurant, is also being renovated to be the Adamson Event Center. The Adamsons have redone the flooring, painted and added their own touches. They hope to be finished working on the space soon. Trisha said there are already weddings and other events lined up.
“It’s a one step at a time project,” she said.
Trisha and Pat both have a background in business. Pat and his family owned Adamson Motors and Trisha owned two apartment complexes in town, the Nicholas Apartments and the Oliver Apartments.
The Adamsons ensured their sons and daughter were on board before purchasing the golf course. In addition to their children, their extended family and their children’s significant others have been contributing time and energy into getting the space up and running.
